this is an adaptation of Martha Stewart's Cloud Pancakes - a good thing! with duck eggs you do not need to separate the eggs, making it easy and delicious. remember you will need only one duck egg to every two chicken eggs.
3 duck eggs (or 6 chicken eggs) 2 c. small curd cottage cheese 2/3 c all purpose flour 2 tbsp cane sugar 1 tsp salt pinch of ground cinnamon 1/8 tsp cream of tartar unsalted butter for cooking maple syrup for serving berries for topping 1. In a medium bowl, combine the eggs, cottage cheese, flour, sugar, salt and cinnamon. Stir to combine.
2. In the bowl of an electric mixer fitted with the whisk attachment, add the cream of tartar and beat on medium speed. 3. In a large non stick skillent melt 1 tsp of butter over medium heat. drop the batter 1/4 cup at a time in to the pan. cook until golden brown and set - 3-5 minutes. flip and cook the opposite side for another 2-4 minutes. Repeat with the remaining batter. 4. Meanwhile warm the maple syrup and when warm, pour over the berries on the hot pancakes. |
